Sauce

 


 

1.      Bechamel : saus putih yang terbuat dari mentega, tepung dan susu sering digunakan dalam masakan prancis. Roux ( ru ) : campuran mentega panas dengan tepung. Jenis turunan saus dari bechamel : cream, morney, mustard, horseradish

2.      Velaute : saus putih yang terbuat dari kaldu , mentega dan tepung

3.      Espagnole : saus coklat yang terbuat dari kaldu , mentega dan tepung. Dan apabila dimasak lagi sampai kental akan menghasilkan demi glaces sauce

4.      Tomato sauce : saus terbuat dari bawang, tomat dan rempah rempah

5.      Hollandaise : saus kuning yang terbuat dari telur, mentega dan lemon.

 

Saus untuk steak :

1.      Beranise : saus yang terbuat dari telur, mentega, dan herba sangat cocok untuk sirloin atau ribeye

2.      Peppercorn : saus yang terbuat dari lada hitam, krim dan mentega, sangat cocok untuk steak tenderloin dan fillet mignon

3.      Mushroom gravy : terbuat dari jamur, kaldu  dan mentega sangat cocok untuk steak ribeye atau portherhouse.

Saus untuk selada :

1.      Vinaigrette : saus terbuat dari cuka, minyak dan garam, sangat cocok untuk selada hijau

2.      Mayonese : saus yang terbuat dari telur , minyak dan cuka sangat cocok untuk selada kentang atau selada tuna

3.      Thousand island : saus yang terbuat dari mayonese , cuka , dan rempah rempah

Untuk saus selada yang modern adalah

1.      Ceacar : campuran minyak, cuka, telur dan keju

2.      Ranch :campuran mayoinese, cuka dan rempah rempah

3.      Greek yogurt : campuran yougurt, cuka dan rempah rempah

Letter by President Lincoln to General Meade

                The Battle of Gettysburg took place over the first three days of July 1863. On the evening of July 4, General Robert Lee, began his retreat southward as a storm clouds poured down heavy rain across the country.
